They are mostly nocturnal, but if they smell food they will come out. I have a huge one, must be 6 inches

They could be dying from many things. Water quality issues, predation from fish or other inverts, bad sheds. They are quite vulnerable to attack while they are shedding and for a few hours afterward. What else have you got in your tank?

4 clowns and a lawnmower blenny, can't keep any other fish either. All die except those ones I've had all along

2 pj cardinals and a foxface. Also a skunk cleaner shrimp.

If the peppermints were small, it's very possible that the pj cardinals could have made a snack out of them. I've had all kinds of things pick at shrimp during and after shedding.
